Power Egg White Hummus Salad

We got hit with a pretty big snowstorm earlier this week on Long Island which left me with nothing to do for an afternoon except experiment in the kitchen. I've had the idea for a while to make a more nutritious version of egg salad with hummus and Greek yogurt instead of mayonnaise but I wasn't quite sure how it would turn out. Luckily, the end product was delicious!
This recipe would be great on a wrap, your favorite bread, or even as a topping on a salad. You can substitute whole eggs for half of the egg whites if you prefer-- this would also be great with chopped chives or red pepper mixed in too!

Power Egg White Salad
Serves 4
Ingredients:
8 large hard-boiled egg whites; chopped (discard yolks)
1/4 cup garlic hummus
1 tbsp plain non-fat Greek yogurt
1 tsp paprika
1/2 tsp black pepper
1/2 tsp salt
Directions:
In a large mixing bowl, combine chopped egg whites, hummus, yogurt, paprika, black pepper, and salt. Mash with a fork.
